Yes, because your five categories can be ordered. If your five categories could not be ordered (e.g. blood types), then it would not work. The catch is that there will be a high degree of degeneracy (more than one instance of the value) in your data. If you (or your software) do not correct for the degeneracy, your results will be skewed.
